Simple Coconut Bacon | VegWeb.com, The World's Largest Collection of Vegetarian Recipes (1)

What you need:

3 large handfuls of bulk coconut
1 tablespoon liquid smoke
2 tablespoon soy sauce/ tamari
1 tablespoon water
1 tablespoon maple syrup (optional)

What you do:

Place coconut in a shallow baking pan. Mix other ingredients together and coate coconut well. Cook in preheated 400 degrees F oven until crispy. It will get crispier after it cools. Use in sandwiches or salads as a vegan bacon substitute. May be kept in sealed container for several days.

I just found your website and was very excited to start trying your recipes. I have been vegan for nearly two years bit this morning I was craving bacon so I thought I would try this recipe becuase I had all ingredients on hand and seemed pretty simple. I ended up with bacon flavored coconut shreds.,,, I followed the exactmeaurments but I am wondering if perhas my handfulls were too big. I don't know but it didn't work for me.

I had never heard of this. I tried it, and it is great. I made a sandwich with tomato and daiya (vegan cheese) with it. Thanks SO much! I am so impressed with the taste. It does taste a lot like bacon ~ enough to satisfy the craving for it. I used Braggs as the 'tamari'. And the tomatoe didn't require any salt with the Braggs and smoke.

I have made tofu bacon and it is good, but it takes a lot of patience, and this was quicker and I didn't have to watch it constantly. I will crisp it up more next time. I imagine that it is not as nutritional as tofu bacon but it hit the spot.

I do have to qualify that I was NOT and still am NOT a huge coconut fan. This was organic bulk and when it was all done, I was not really aware I was eating coconut so much as you may think if you are just hearing of the idea and thinking you are not that fond of coconut either. I don't think you really have to be as this taste 'changes' with these ingredients.

The taste as with tofu bacon can vary upon what 'format' of liquid smoke is used. I tried all the various flavors, but I tend to like the mesquite more than the hickory smoke. If you are just making this, try em all to see.

This recipe is great for people with multiple allergies (yes, YOU, Jim) or people trying to just eat healthier and easier. It doesn't require a fridge and stores really well. Gets soggy quickly but when I made a batch and took it to work it was gone really fast! The trick is to find the largest coconut flakes you can. I'm just wondering if this would work in the microwave or on the grill- it's 95 F outside and I really don't want to turn on the oven!

Bulk coconut would be coconut found in the bulk bins (not prepackaged) in your health food store or a place like Whole Foods. You can buy as much or as little as you like. It's usually cheaper since you aren't paying for the packaging. I guess since the recipe calls for 3 large handfuls, abbeysmama thought bulk would be cheaper because it might take a couple of smaller, more expensive bags of coconut to make the recipe.

;D Thanks!!! I wondered if it was a size thing or something, like bigger flakes.... Cool, I am going to make this tonight! I have made the tofu bacon on this site several times, now and it is awesome as "blt's", in casseroles, etc. So I am excited to try this one.
