Mmm, I haven’t made some of these yet! I’m a vegan, and yours is the only vegetarian blog I follow – most of your recipes are so easy to veganize and always delicious. Thank you for all your hard work! Wishing you all the best for 2018!

I made the chickpea salad and it was fabulous! I usually feel underwhelmed by chickpea salads because the chickpeas are bulky and don’t provide a ton of flavor themselves. But this one was amazing! I also hesitated to buy a bottle of sherry vinegar, as I’d never tried it and wasn’t sure I wanted another bottle in my collection. It was delicious!!

Thanks for your wonderful recipes! I’ve recently made a few for my mom who was visiting from overseas, and she loved them as much as I do. For 2018, I’m craving more ideas for tacos! Happy New Year to you and Cookie!

Hi Kate, happy New Year to you an Cookie
Thank you for all your inspiration… it is much appreciated.

My favourite recipe for 2017 – out of your repertoire – is definitely the “Best Spiced Vegan Lentil Soup”. I have cooked it weekly, during the colder months, we live in the southern hemisphere. My husband loves it, I supplied my elderly neighbour regularly with a large jar, made lots of friends happy, and even my very fussy niece and nephew loved it so much, that they would “request” it! This soup is a meal in a bowl with lots of depth, texture and taste.
This soup is now firmly in my repertoire… thank you Kate.

We love your healthy and delicious recipes. We live in Africa, where we are currently in the hot/dry season, so your salads provide wonderful meals for hot weather. Our two favorites are your kale/edamame/avocado salad and the kale and apple salad with granola croutons. Since you asked for requests, I’ve not found anything on your blog that includes bean sprouts–if you come up with suggestions for those, I’d love to hear therm. We are making our own from mung beans.

    Thanks, and happy new year!

Hi Kristi – Thanks for reading from Africa! Sounds like a fun adventure. I haven’t focused on beansprouts but will add this request to my list to explore in the future. Happy New Year!

    Hi Kate
I made your ziti with lentils and it was delicious! I decided to use cottage cheese as you suggested and I was glad I did. Also made the Vegetarian Chopped salad and it was a big hit.

I have been vegetarian since 1972 and I’m always looking for new recipes. Every time I have used one of your recipes they have been delicious!

    Thank you!
