I loved making (and eating!) no-bake cookies as a kid! Who doesn't love the combined chocolate and peanut butter flavor?! It was one of those things that I could do by myself once I got old enough and I loved having them for a school snack for the next couple of days.

These are super easy cookies to make, so let your kids do most of the work. They'll love it!

I thought it'd be fun to try to make a different flavor of no bake oatmeal cookies because I haven't really seen that before! And this recipe was born. And I really like it!

Are Maple No Bake Cookies Healthy?

These cookies are made with minimal natural sugar and wholesome, nutrient-dense ingredients!

Sprouted oats- Oats are a very nutritious grain. They are high in fibre, protein, and many vitamins and minerals.

Oats naturally contain an anti-nutrient called phytic acid which prevents the body from absorbing some of the nutrients. The process of sprouting helps to reduce or neutralize the phytic acid, making the nutrients in the oats more available to your body. So if you can get your hands on somesprouted and glyphosate free oats, go that route! However, regular rolled oats will work fine and provide nutritional value.

Sprouted wheat- Wheat contains many great nutrients that aren't accessible unless it is first soaked, sprouted or fermented. Sprouting makes it possible for your body to actually utilize the nutrients in the wheat, such as fiber, protein, manganese, phosphorous, copper and folate. Learn how to sprout your own wheathere. You can also substitute whole wheat or all-purpose flour if needed.

Coconut oil- High in lauric acid (and smaller amounts of other healthy fatty acids), which can change quickly into energy in the body, and improve heart health and brain function.

Almond Butter- Almonds are high in protein, healthy fats, vitamin e, magnesium and manganese. They are also a decent source of fibre. Be sure to use PURE almond butter- the kind with no additives! If you substitute it with another nut butter, the nutrient profile will be somewhat similar. The healthiest option would be to use homemade almond butter from soaked nuts.

Maple Syrup- Contains some minerals and antioxidants, and of course, is high in sugar. Can't ask much more from a sweetener! My aim is to create recipes using the least amount of natural sweetener possible that will still yield a subtly sweet and delicious treat. Just please make sure you use real maple syrup, none of these corn syrup knock-offs!

Nuts - Full of vitamins and minerals, protein and healthy fats. Soak and dehydrate them before you put them in the cookies for the most possible nutrition and the easiest digestion. I soak a ton at once and keep them in a bag in my fridge once they are dehydrated, so I'm ready to use them in recipes like this.

Are Maple No Bake Cookies Vegan?

Yes! These cookies don't contain any dairy or other animal products.

How Long DO No Bake Cookies Need to Set?

Allow these to set in the freezer for 30 minutes, or in the fridge for 2 hours.

Can I Freeze Maple No Bake Cookies?

My favorite place to store them is in the freezer. They only take a few minutes to thaw. If I'm honest, I usually just bite into them straight out of the freezer and enjoy them no problem.

Maple No Bake Cookie Variations

  • Use any nut butter in place of the almond butter. I chose almond butter because it has the most subtle flavor, so the maple flavor can more easily shine through.
  • Use any type of nut or seed. If you don't have any, you can add more oats instead of nuts.
  • Any type of flour will work. My go to is sprouted wheat (because it's the healthiest I've got access to)!
  • In theory, you can use butter instead of coconut oil, but I haven't personally tried that in this recipe. Let us know if you do!
  • Replace ½ cup of the nuts with something extra like red and green M&M's for Christmas, chopped mini eggs for Easter, or shredded coconut, chocolate chips, dried fruit, hemp hearts- whatever floats your boat!
  • For extra maple flavor, you can add ½ teaspoon of maple extract when adding the vanilla.
  • Use unsweetened cocoa powder in place of the flour to make this closer to the traditional version.

How to Make Maple No Bake Cookies

Ingredients:

  • 3 tablespoon coconut oil
  • ½ cup pure maple syrup
  • ⅔ cup almond butter
  • ½ teaspoon pure vanilla extract
  • 2 cups rolled oats (sprouted is ideal)
  • 1 cup chopped nuts
  • ¼ cup flour (I use sprouted wheat, but you can use any)
  • ½ teaspoon sea salt

Instructions:

Prepare 2 baking sheets (or another flat dish that can fit in the fridge) by lining them with parchment or wax paper.

Combine coconut oil, maple syrup and almond butter in a small saucepan over low heat.

Stir until fully incorporated and melted, then remove from heat. Stir in vanilla.

Mix in oats, nuts, flour and salt.

Scoop the cookie dough mixture in mounds onto the prepared cookie sheet and press to your desired thickness. I scoop about ⅛ cup (same size as a cookie scoop) and make the cookies ½ inch thick.

The cookies will set the fastest when placed in the freezer but can be placed in the fridge as well.

How to Store Maple No Bake Cookies

Store the cookies in an airtight container in the fridge or freezer. Depending on the temperature of your home, they may be a bit melty at room temperature.
