Easy and delicious, Ravioli Lasagna is the perfect casserole recipe that the whole family will devour!

I think I have started nesting… and not because of the pregnancy, but more because of the big change looming with both of my kids starting school! I know routine will be a must and morning or evening we will really need to have a schedule so that things run smoothly and everyone stays happy. On Pinterest and our Facebook page I have been posting quite a few lunch ideas because I will have to send the kids to school with a packed lunch every day.

Dinner is going to have to become much more planned also or we might end up eating PB&J and canned fruit more than one would like to admit! I have always wanted to meal plan. I love the idea of meal planning. It is just the actual sitting down and doing it that never happens. I mean, it is in my bio, you can go read it – engineer by trade but hopeless right brain by practice. This would be the practice part.

With big changes on the way and no way around being more organized ( other than succumbing to PB&J dinners – I don’t even like PB&J!) I have been dusting off my old favorites and creating some new ones so that I can put together a good solid list of easy weeknight meals for the school year and make meal planning doable even for a hopeless right brain like me.

Ravioli Lasagna has turned out to be absolutely the new favorite at my house. I have never seen my son eat anything so well! It is kind of crazy how much he likes it actually. It is quick, easy and kid friendly. Winner Winner! It has been officially added to the meal rotation.

Here is how to throw this together super quickly.

Start by browning one pound of lean ground turkey. Once it is cooked through, pour a jar of your favorite spaghetti sauce over it and let it simmer while you gather the grated mozzarella and then mix the 4 ounces of ricotta and egg until well blended. Note: If you want a more grown up version of this to serve, try using goat cheese in place of ricotta! It gives it a wonderful zing and is amazingly delicious!

Next grab an 8×8 baking dish. Spread a thin layer of sauce across the bottom of the dish. Place thefrozen ravioli in a single layer to cover the bottom of the dish. Then create your second layer by scooping a generous amount of sauce over the ravioli to cover it. You can use any flavor frozen ravioli that looks good to you! I personally love the frozen spinach and mozzarella ravioli that we get at Costco, so I usually stick with that.

Take your ricotta mixture and drop dallops of the cheese over the sauce layer. Then cover with mozzarella cheese. Repeat this same method again until you have reached the top of the pan. For me it usually only takes twice.

Bake at 350˚F for 35-45 minutes or until it is hot, bubbly, and cooked through!

Ingredients

  • 16 oz Ground Turkey
  • 1 Jar Spaghetti Sauce I use Prego
  • 1 Bag Frozen Ravioli approx 30 raviolis
  • 16 oz Mozzarella cheese shredded
  • 4 oz Ricotta Cheese
  • 1 Egg

Instructions

  • Brown the turkey in a large skillet over medium heat.

  • Mix in the spaghetti sauce and let simmer on low.

  • Mix the ricotta cheese and egg until the mixture is smooth.

  • Place a thin layer of sauce on the bottom of an 8x8 baking dish.

  • In a single layer, lay the frozen raviolis to cover the bottom of the dish.

  • Layer a generous amount of the meat sauce on top of the raviolis.

  • Dollop with the ricotta cheese mixture

  • Cover with mozzarella cheese.

  • Repeat until dish is full covering the top with mozzarella cheese.

  • Bake at 350?F for 35-45 minutes or until it is hot, bubbly and cooked through.

    I’m assuming this would work ok with fresh ravioli? I’m totally making this next week!!

      It definitely would! I buy big bags of the frozen and get several batches out of it for convenience sake. But if you want to use fresh, I would just sub those in and adjust the cooking time down a little. Hope you guys enjoy it! My little guy asks for it every day now… who would have thought?!

    Such a great recipe! One of the best lasagnas I’ve tasted and it was so easy and fun for my toddlers and me to throw together in 5 minutes and stick it in the oven.

    Here are a few changes I made:

    -Just used beef ravioli instead of browning any meat.
    -Used plain old cottage cheese instead of the ricotta cheese/egg mixture.
    -Made sure to buy pre-shredded mozzarella cheese so I didn’t have to grate any myself. Also, we had some grated Parmesan in the fridge, so we sprinkled some on top of the lasagna, which added a nice touch.
    -Loved the Prego sauce (thanks for letting us know that’s what you used!). I used the Traditional Prego.

    With the changes I made, the only dishes that got dirty were the baking dish and two small spoons (to help get the cottage cheese and the sauce out), which was awesome!

    Thanks so much for sharing this recipe. I don’t know if I can ever make regular lasagna again. 🙂

    I made this for dinner tonight. The only problem I ran into was not enough sauce. I ended up adding a 4 oz can of tomato sauce to the spaghetti sauce I used (Classico’s Creamy Spinach and Parmesan) and I also topped it with some shredded Parmesan. I baked it for 45 minutes and it was soooo good. Super cheesy and gooey. Perfect for this 0ºF night!

    WOW this turned out so YUMMY!! I used ground sausage instead of turkey. I also added a can of diced tomatoes to the mix. This was the BEST lasagna type meal I have made at home. Five stars. Easy, few ingredients and loads of flavor after adding spices. Thanks!

    I give this recipe 5 stars for taste and ease. So easy with very little key ingredients hard to get this wrong. I however made a few changes.
    * didn’t have turkey,used beef
    *doubled ricotta
    *added salt,pepper and parm to the ricotta mixture
    I’m going for seconds as I type this. Thank you so much for sharing!

    I used spinach and cheese ravioli, doubled the ricotta and sauce because I did it in a deep lasagna pan, I added a layer of left over creamed spinach to the bottom layer and I used sun dried tomato alfredo sauce it was so good !
