These winter dinner ideas are easy and so delicious! This easy shepherd’s pie is a classic comfort dish that perfectly warms you up on chilly evenings.

Ingredients

  • For the Filling:
  • 2 tablespoons olive oil

  • 1 yellow onion, diced

  • 2 garlic cloves, minced

  • 1 large carrot, shredded

  • 1 pound lean ground beef or lamb

  • 2 tablespoons tomato paste

  • 2 tablespoons all-purpose flour

  • 1 tablespoon Worcestershire sauce

  • 1/4 cup red wine

  • 1/2 cup beef broth

  • 1 cup frozen peas

  • 1/2 cup frozen corn

  • 1 sprig fresh rosemary

  • 1 sprig fresh thyme

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • For the Potato Topping:
  • 1 1/2 – 2 pounds Russet potatoes, peeled and cubed

  • 1/4 cup unsalted butter

  • 1/3 cup half & half

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup Parmesan cheese, grated

Instructions

  • Heat oil in a heavy pot over medium-high heat. Saute the onions until soft – about 5 minutes. Add the garlic and carrots and cook until fragrant.
  • Add the ground meat and cook for 5 minutes, stirring to break it apart, until browned.
  • Add the tomato paste, cook for a few minutes, then mix in the flour.
  • Add Worcestershire sauce, red wine, beef broth, peas, corn, rosemary, thyme, salt, and pepper. Mix everything well, reduce the heat to low, and simmer for 15 minutes.
  • Meanwhile, preheat the oven to 375 degrees Fahrenheit. Grease a 9×9-inch casserole dish with butter or cooking spray.
  • Boil potatoes in a large pot until fork-tender. Drain, then return them to the hot pot.
  • Mash the potatoes with butter, half and half, salt, pepper, and Parmesan until well blended and smooth.
  • Spread the meat filling evenly into the prepared casserole dish. Spoon the mashed potatoes evenly on top. Bake, uncovered, for 25-30 minutes.
  • Cool for 15 minutes before serving.
  • Enjoy!
